Kameari, Katsushika Ward is one of the hidden fierce battlefields for ramen. Nonokura opened in the area in December 2017 with its unique super hydrated hand-made noodle. The storekeeper trained himself under the well-known ramen restaurant "Ikaruga" in Tokyo for seven years and started his own business. He's put all of his energy into making the unique toppings, soup, and noodles. Currently, the restaurant offers two types of soups, "salt" and "soy sauce." The soup is a blend of chicken soup stock made by adding a large amount of whole matured chicken and chicken bones, and the seafood soup stock taken from four types of dried sardines, round herrings, dried thick bonito shavings, and kelp. Salt taste uses mellow salt sauce that emphasizes the presence of the soup stock. "Soy sauce" taste uses a fresh soy sauce with sweet cooking sake and is dynamically antagonized with the soup stock.

The storekeeper pursued the chewy noodles that have a smooth texture like udon noodles. As a result of trial and error, he has realized super hydrated noodles boasting a water content of 53 to 57% by skillfully utilizing strong flour.  You can always enjoy the freshly hand-made noodles at the restaurant.
